Gaby Scelzo’s Cheater Chocolate Mousse

Ingredients
- 4oz Coconut Milk chocolate (minis or bars will do!)
- 1/2 cup, plus 2/3 cup heavy cream or coconut cream
- Pinch of salt
Instructions
- Coarsely chop chocolate and place in a heatproof bowl. Set aside.
- Heat 1/2 cup of heavy cream in a small saucepan over low heat until it begins to simmer. Immediately remove cream from heat and pour over the chopped chocolate. Let sit for 5 minutes.
- Use a whisk or hand mixer to combine the melted chocolate and warm cream until the texture is thick and glossy.
- In a medium bowl, add the remaining 2/3 cup of heavy cream and using a hand mixer (or a whisk if you dare), whip until the cream is very thick and holds its shape.
- Add the chocolate mixture to the whipped cream, along with a pinch of salt, and gently fold the two together using a spatula. Refrigerate for at least 1 hour, then serve with more whipped cream and crumbled cookies, shaved chocolate or summer berries.
