Be a chocolate maker for a day: fall classes are in session!
There's often a waitlist for our chocolate-making classes at the factory, and we get why: there's nothing quite like spending an afternoon in Red Hook or evening getting your hands chocolatety and crafting your own personal set of single origin bars and truffles, or tasting chocolate alongside coffee, tea, and wine to your heart's content. People often tell us that taking a class here changes their perspective on chocolate (and food in general!), and they leave with a new appreciation for how much work goes into the process.
Chocolate is a wonderful example of our unique relationship to food: as far we know, almost every other animal simply eats for fuel. But for thousands of years, we've taken our fuel and transformed it into a form of expression. When you make chocolate from scratch, whether that be starting with the whole bean in our Bean-to-Bar Class or you make your own truffles and ganache in our Ganache & Truffle Making Class, you participate in this incredible, centuries-long pratice. The finished products do not resemble the raw material in appearance, but the processes transform them, coaxing out and unlocking their fullest sensory potential. Come join us at the factory, and transform beans into bars, couverture into truffles, or simply taste the fruits of this labor alongside complimentary foods like coffee, tea, and wine. One thing we can guarantee: you'll make memories!
As cooler weather approaches, we're opening up spots in our very popular Hand Rolled Truffle & Ganache Making Class, Bean-to-Bar Chocolate Making Class, and our weekend Coffee & Chocolate Pairing Classes. We're also hosting our last Ice Cream Making Classes for the year, so come churn your own pints with us and stock up that freezer for the winter. Ganache & Hand Rolled Truffle Making Class
In our intensive Ganache & Truffle Making Class, you'll learn the foundations of ganache making, shaping truffles, tempering chocolate, and enrobing truffles by hand! Once students cook and temper their ganache, they will get into rolling and coating truffles like in our OG class. Same chocolate, same taste, more hands-on fun! You'll go home with more truffles than you may know what to do with. We've never heard of anyone having a problem eating (or sharing!) them all, though.

Bean To Bar
Bean-to-Bar Class is a hands-on experience that gets right down to the “nibby gritty” of small-batch chocolate making. Using a variety of equipment - from blow dryers to roll mills, you’ll blend DIY and professional methods to make your very own batch of dark chocolate from bean-to-bar in just a couple hours. You’ll walk out the door with real chocolate making experience and a bag of your own bars to prove it.

Chocolate & Coffee Pairing Class
Roll into the weekend (and the new season) with a stimulating hour of chocolate, coffee, and conversation. In our Coffee & Chocolate Pairing Class, we pair 3 locally-roasted single-origin coffees with our unroasted, single-origin chocolates. You’ll learn how to do a side-by-side coffee cupping, how to maximize the sensory experience of chocolate and coffee, all about key flavor profiles of chocolate, and how to talk about aroma, texture, and flavor. Fresh bagels and vegan cream cheese will be provided after the cupping.
Chocolate and coffee selections change periodically as we release new bars every month and the seasons change. We have spots open for this upcoming Labor Day.
